For environment art I'd probably be looking for good models (low-poly and high-poly too if possible), with good textures on them.
If you have good initial concepts/sketches that you've done for your environments, then include those too, but if your sketches or concepts aren't very proficient then I wouldn't bother, since at most companies an environment artist won't be concepting things much anyway.
Solid modelling and texturing is vital. Don't include character work if it's not up to the same level of quality as your environment work.
Basically the bottom line is only showcase your best and most representative work. Don't just throw everything you have together, because your work will usually be judged by the lowest quality piece in the site.
